Create New Bubbly

By Fred Delkin
Both "better tasting and better for you" are the claims for a new bottled beverage,
Dry Soda, now being shelved by a store near you. We've sampled the product and testify that it
lives up to its billing...it is very low in calories and sugar and the seven flavors currently bottled
taste like their natural antecedents. A Seattle mother of four, Sharelle Klaus, created this
refreshment in her home kitchen and tested its popularity in Seattle restaurants prior to its debut
as a retail item.
All flavors are clear and bottled in 12 oz. clear bottles with a bright splash of color appropriate to
the flavor origin within. The creator was obviously inspired by fine cuisine...witness the flavors:
Cucumber,Juniper Berry, Blood Orange, Rhubarb, Lavender, Vanilla Bean and Lemon Grass.
The modest calorie count (displayed on the bottle neck) ranges from 45-70 per flavor. Healthy?--
These have no caffein, gluten or sodium and officially vegan. The pure cane sugar is minimal
and the other ingredients are carbonated pure water (from Portland's Bull Run reservoir), natural
flavor extract and phosphoric acid.
The producer is based in Seattle with offices and tasting room in Pioneer Square, while
preparation and bottling is done in Portland. The fruit, flower and herbal flavors are distinctly
present to the sip. While a superb refreshment on its own, the subtle flavors of Dry Soda lend
themselves to mixology in the bar. Some cocktail creations include:
